Peruvian Food: Causa and Ceviche

Peruvian food is rich and complex and reflects the complex influences of Peruvian culture. Two of my favorite dishes are causa and ceviche. Causa is so delicious and hearty. Made of layers of seasoned mashed potatoes (the yellow varieties are the most attractive in this dish) interspersed with layers of avocado, and meat (tuna, chicken, and crab all work well). Garnish with hard-boiled eggs, herbs, or olives and you have a satisfying meal that is inexpensive and fit for company. Ceviche is a beautiful, healthy dish. Thinly sliced raw fish and onions, marinated in lime juice form the basis of this heavenly dish, and chiles and cilantro round it out. The acid of the lime juice “cooks” the fish, meaning that no oils or fats are added in preparation. The ceviche simply marinates in the lime juice for three hours or so, until it is opaque. Delicious!
