The old-vine St. Veran from 1978 was a gem — rich, but tightly wound, it slowly opened after two hours in the glass. This Chardonnay isn’t about the obvious; it’s all about the virtue of patience. After a couple hours, the fine, sturdy muscle of the Chardonnay starts to let go, showing off the green apple core, and yes, the kiss of honey. If you know these wines as we’ve come to know them, that core argues for a decade (or two) in a cool cellar.
